Chocolate soup with salted almonds
1 tbsp unsalted butter
45g flaked almonds
40g cocoa powder
100g chopped dark chocolate
Melt 1 tbsp unsalted butter in a frying pan over med-low heat, add 45g flaked almonds and saute them until golden brown. sprinkle with fleur de sel and set aside. Whisk 250ml water, 100ml cream, 25g sugar and 40g cocoa powder in a saucepan over med-low heat until sugar has dissolved. Let the mixture bubble gently for 2-3 mins, then add 100g chopped dark chocolate. Stir witha whisk until smooth, then pour into bowls , top with almonds and serve straight away.
