Japanese chilli mackerel fillets

Serves 10 pax

 

Ingredients :

200g onion

60ml soy

80ml vinegar

30ml white wine

500ml water

1 spicy chilli

20g sugar

5 mackerel

100g flour

 

Method :

Fillet the mackerel & cut each fillet into 3 pieces.

Toss in flour & deep fry a few pieces at a time.

Put all the other ingredients in a pot & boil hard until the onions are very soft & it has reduced by half the original quantity.

Pour this over the mackerel fillets in a tray (so they are covered with the liquid).

Leave to cool & then store in the fridge for 24hours.

Serve cold with your favourite salad.
