50ml Dessert wine or muscatel
16 lady finger biscuits
Blend 100g of the strawberries with a spoon of icing sugar & keep aside.
Beat the egg yolks with the sugar until still & pale.
Beat in the marscapone.
Best the egg whites seperatley with a pinch of salt. Fold into the yolk mixture.
Spoon some of this into the chilled glasses.
Add some biscuits soaked in the sweet wine.
Add some strawberry puree & fresh strawberries.
Repeat this for 2 more layers.
Top with slices strawberries & icing sugar & keep in the fridge.
