Serves 4 people
2 cloves Garlic
30ml Olive oil
1/2 Fish stock cube
1tin Coconut milk
150g Salt cod (frozen)
1tspn Curry powder
- Fry the onion & garlic in the olive oil. Add the curry powder & the flour.
- Mix well & add the milk a little at a time stirring all the time to avoid lumps.
- Bring to the boil & continue stirring.
- Add the salt cod, coconut milk, salt & pepper and simmer gently
- Blend with a stick blender and pass through a fine sieve.
- correct the seasoning & serve hot.
