Spread dough onto tray night before &amp; keep in fridge, then remove carefully so as not to collapse air structure. I have now tried cutting this up &amp; freezing for emergencies. Works really well. A whole lot easier than making focaccia or ciabatta by traditional methods, and, to my mind, a better result than either.</p> <p>I spread the dough onto oiled greaseproof paper before refrigeration which I thought was the method I heard on the radio. <br />(I seem to recall you advising exercising caution after removing the tray from the fridge to prevent the air bubbles being dissipated.) However, having been onto this website, I see that your recipe doesn't spread the dough until after refrigeration, just before the final proving.</p> <p>Did I dream the up the method I have been using as result of my senility advancing at a more rapid rate than hitherto thought, or is there a more mundane explanation? And is 200°C the correct oven temp? (So far, it has worked for me).
